Victoria Cake |
Queen Victoria had been in grief for the death of her husband, Prince Albert. This Victorian Cake was served at the tea party on returning to her official service. |
Ingredients (for two 7" round tin) 4 oz (110 g) butter
4 oz (110 g) castor sugar
2 eggs, beaten
4 oz (110 g) self-raising flour (baking powder already added)
2 tablespoons raspberry jam
A little castor sugar to sprinkle on topoil to grease

Process
- Cream the butter with the sugar till pale and fluffy
- Beat 2 eggs and add gradually to creamed mixture.
- Carefully fold in half the flour then fold in the rest.
- Pour into a greased and lined 7" round baking tin
- Bake at 375 F (170 C) for about 30-40 minutes or until well-risen, and golden.
- Cool on a wire rack then slice it half.
- Sandwich together with the jam and sprinkle with a little castor sugar.

Tips You can try Lemon Curd or Strawberry jam instead of Raspberry jam.
